Dove Dumplings

(aka Meat Tarts, aka Piroshki)

Recipe makes 8 dumplings

 

Ingredients:

·        2 cups flour

·        ½ cup sour cream

·        1 egg yolk

·        2 tablespoons butter

Filling:

·        ½ pound dove breast

·        1 onion, minced

·        1 tablespoon butter

·        ½ teaspoon of salt

·        ½ teaspoon additional seasoning (optional)

 

Directions:

1.       Sift flour and add melted butter.  Stir until well blended.

2.       Add sour cream and knead several minutes.

3.       Roll out on floured board (or rolling mat) to ¼ inch thickness.

4.       Cut with a round biscuit cutter (or small bowl, a cup, etc.)

5.       Brown the onion in butter.

6.       Add dove meat with onion and add seasoning. 

7.       Stir meat until it has lost its red color.

8.       Place a spoonful of filling in center and close tightly by pinching into an oblong shape. 

9.       Brush entire dumpling with egg yolk in baking dish.

10.   Heat oven to 400° and place dumplings into oven. 

11.   Watch dumplings – when the crust is brown, remove the dumplings and enjoy!
